Whole Brisket cut on the bone

Ian our Butcher has always had a lot of input into cuts of meat, this was a cut Ian came up with and the meat was so tender, probably not a cut to serve to a large crowd as the meat is between layers of fat and sits on top the ribs. (they there trust me!) As a foodie always looking for something new this was great to cook and the meat was so tender after a 15 hour cook.
